Foreword
Being wheat intolerant for years it
came as a shock late last year (2010) when I finally discovered I was
dairy intolerant all along as well.
For a few years beforehand
I had lots of symptoms and just couldn't get it pinpointed down to
any specific cause. Over the last few years, my symptoms included
fainting, bloating, no energy, diarrhea, aches and pains, stomach
cramps, a 'cloudy-like' brain, psoriasis and rhinitis (I was even
being scheduled for an operation on my nose, which is no longer
necessary due to the benefits of the dairy exclusion). I was being
tested over the years for heart problems, throat cancer, and whatever
else could be thrown at me.
It has taken ten months, learning
new food habits and creating new recipes. Better still my recipe
collection is growing all the time. At first I found it difficult to
just think without dairy and still get the required nutrients but you
can get them from the vegetables, lentils, beans, nuts, seeds and the
like.
Reworking the new recipes many times they are now
staples in my kitchen recipe collection. My husband cleverly called
them my dairy free starter pack. If you are struggling with having
to exclude dairy for whatever reason, be it health or lifestyle
choice and believing it has to be boring then think again. There is
a whole new world of flavour, choice and wonderful recipes beckoning
you and includes a far wider range of vegetables, fruit, nuts, seeds,
lentils, beans, grains and lots more than you could have
imagined.
Also, I suspect that the reason you gravitated
towards this book was because like me, you have become or are
becoming aware that things like commonly used wheat, dairy, cane and
beet sugar or some combinations thereof cause you some difficulty.
If that is you then fear no more because this book is filled with
recipes excluding them. I hope this book acts as a stepping stone to
a life where the kinds of the treats you used to enjoy are not just
available to you in a different form but are as delicious, if not
better, and also fun to make.
