THREE-BEAN SUPREME

1 can garbanzo beans

1 can kidney beans

1 can black beans

1 small can black olives, sliced

1 onion, chopped fine

3 (or more) cloves of garlic, chopped

2 teaspoons olive oil

Chop the onion into fine pieces and sauté on the stove in olive oil. When the onions are about to caramelize (about 15 minutes), add the chopped garlic.

Open and drain the cans of beans, rinsing them thoroughly to remove excess salt. Also open and drain the can of olives. Use a food processor or knife to cut the beans into smaller pieces.

When the garlic has softened, add the beans and mix everything together well and cook until everything is heated through.

Tip: The beans are delicious and ready to eat as is, or you may add them to a flour tortilla and make a bean burrito, eat them with tortilla chips, or make them the center of a green salad. I’ve even added them into an egg omelet, along with tomatoes and a little bit of cheese. Delicious!
