When I decided to move to Portugal from London in 2009 with my husband and newborn baby, I really had little idea of what I let myself in for. Apart from speaking little to no Portuguese, I was also absolutely unsure of how I was going to make a living or even where to start. In the midst of my uncertainty, I was clear on the fact that I wanted to work and continue to build my career.
After some research, combined with my skills, sales presentation and freshly dry-cleaned suit; I single handedly set up the first Nutrigenomics spa service in Portugal.
In hindsight, setting up took a lot longer than I had expected and I encountered a few obstacles along the way. This has made me want to share my experience and perhaps even help others who are considering setting up a similar kind of service.
It is safe to say that Nutrigenomics or personalised nutrition is the way of the future and therefore setting up now will prepare you for the next decade.
This book is for you if you are not sure how to get started in Nutrigenomics or if you need a practical guide to help you answer some questions before offering Nutrigenomics as part of your service.
This book is not an evidence-based guide, it is rather a description of a ‘trial and error’ approach that you can adopt, adapt or even ignore. This book does not delve into detailed genetics, but rather aims to provide practical advice on how to set up a service, something I wish I had access to when I started out.
Nutrigenomics and functional food consumption is at the forefront of preventative healthcare innovation, and I hope you can use some of my learning for your own journey.

Chapter 1 - Entering into the era of Nutrigenomics
Following the decoding of the human genome project which was completed in 2003, a vast number of new data has been generated. As part of this new development, the area of Nutrigenomics was coined which combines the sciences of Nutrition, Molecular science and Genetics. It is defined as the study of food or bioactive food molecules on genetic expression. Large companies, institutions and researchers have joined up to make sense of all the new information that is generated from the microarray and sequencing technology with a view to understand genetic differences in response to bioactive food molecules and for the development of functional food products.
Nutrigenomics is here to stay, it has already been included in Nutrition Masters programs, and companies are already planning on developing functional foods suitable for subtypes of populations. It is estimated that the functional food market will be worth around $29.8 billion by 2014 (Leatherhead Food Research 2011). Personalised diets together with medicine and pharmacology will be the way of the future, therefore staying ahead of the trend is crucial.
